Tomato Basil Pasta

The best & easiest crock pot recipe! Fresh tomatoes, basil, mozzarella, and chicken combine into cheesy, saucy goodness for the perfect hands-off dinner. Who doesn't love a saucy, cheesy tomato basil pasta? Ready in 3 hours, this is a recipe you'll want to keep in your repertoire.

Ingredients

  • 1 jar Cookwell & Co. Tomato Basil Soup
  • 1 lb. corkscrew, penne, or rigatoni pasta
  • 1 container cherry tomatoes
  • 1 lb. boneless skinless chicken breast
  • Optional red pepper flakes
  • 1 Tbsp salt
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh parsley
  • 1 8oz container of mozzarella balls, drained
  • 1/2 cup shredded parmesan

Directions

  1. Heat a pot of salted water on high. Once boiling, cook pasta according to package directions, drain, and set aside.
  2. Meanwhile, set crock pot to high and pour in the jar of Cookwell Tomato Basil Soup.
  3. Add in the cherry tomatoes and raw chicken breast.
  4. Sprinkle in red pepper flakes, salt, and any other desired spices.
  5. Add the fresh basil and mix well. Cover the crock pot and let cook for about 3 hours, until chicken is fully cooked.
  6. Remove cooked chicken from the pot and shred it, before adding it back into the pot. 
  7. Pour in the cooked pasta, as well as the chopped parsley - mix well!
  8. Spread mozzarella balls evenly on the top of the pasta, and sprinkle parmesan over as well. Cover for about 5-10 minutes until cheese is melted.
  9. Divide tomato basil pasta among bowls and serve! Garnish with additional fresh herbs, red pepper flakes, or parmesan if desired.
