Lasagna Soup

If you look up cozy in the dictionary, you’ll see a photo of this lasagna soup! Sometimes you’re just not up to all the assembly that comes with making traditional lasagna, and turning it into a soup turns out to be a brilliant shortcut. In just a few simple steps you’ll have this comforting soup for days - and you can make it your own by choosing toppings, such as basil, parsley, ricotta, or heavy cream! Some might argue lasagna soup is even better than regular lasagna… but we'll leave that up to you to decide!

Ingredients

  • 2 tbsp olive oil
  • 1/2 lb. ground beef
  • 1/2 lb. ground hot Italian sausage
  • 1 jar Cookwell tomato basil soup
  • 2 cups chicken broth
  • 1/4 cup fresh parsley, chopped 
  • 1/4 cup fresh basil, chopped 
  • 1/2 lb. of lasagna noodles, broken into thirds
  • Sprinkle of mozzarella 
  • Salt, pepper, red pepper flakes to taste

Directions

  • In a large pot or Dutch oven, heat the olive oil over medium heat. Add the beef and sausage, breaking up and stirring until cooked through. 
  • Once the meat is cooked, add in the jar of tomato basil soup, chicken stock, salt, pepper, and red pepper flakes, as well as the chopped herbs. Stir until well combined, and add in the lasagna noodles. 
  • Turn the heat to low and let the lasagna soup simmer 25 - 30 minutes. 
  • Divide soup among bowls. Stir in desired amount of mozzarella, and garnish with more basil, parsley, and/or ricotta.
