Streusel-Topped Mango Sweet Potatoes

The best side dish Thanksgiving dinner ever saw. Good enough to be dessert!

Ingredients

  • 2 15-ounce cans sweet potatoes, well drained
  • 1/3 cup whipping cream
  • 1/2 cup Cookwell & Co. Sweet Heat Mango, Green Apple & Habanero Sauce
  • Streusel Topping:
  • 1 cup flour
  • 4 tablespoons (1/2 stick) butter, softened slightly and cut into small cubes
  • 1/2 cup firmly packed light brown sugar
  • 2 teaspoons ground cinnamon
  • 1/4 cup chopped pecans

Directions

Preheat oven to 350 degrees. Spray a 9- x 13-inch baking dish with non-stick spray; set aside.

Place the drained sweet potatoes in a large bowl and mash them until fairly smooth. Add the whipping cream and Sweet Heat Mango, Green Apple & Habanero Sauce and whisk to blend with the potatoes. Turn the mixture out into the prepared baking dish; set aside.

In a separate bowl, mix together the flour, butt, brown sugar, cinnamon and chopped pecans. The mixture should resemble a coarse meal. Scatter the streusel topping over the sweet potatoes in baking dish and bake in preheated oven for 25-30 minutes, or until the topping is golden brown and potatoes are bubbly. Serve hot.
